The History of Easter Candy: Peeps, Jelly Beans and Chocolate Bunnies. Oh My!

This time of year, Americans collectively spend almost $2 billion on Easter candy. This falls just behind Halloween for which Americans bought 600 million pounds of candy last year. That adds up to $2.4 billion spent on trick-or-treating sweets. This has me wondering… when did Easter first become associated with certain candies?

tumblr_lh3tyuDgdq1qhv0r1o1_500Unless you live under a rock or really despise candy, you’re probably familiar with these classic Easter candies: Cadbury Creme Eggs, Jelly Beans, Peeps, and of course, chocolate bunnies. After a bit of research, I found out that the original Easter treat was actually something called “Hot Cross Buns” which were made for Good Friday. See photo below:

It seems that these round cross-bearing buns were first on the Easter scene, as well as the egg. Eggs have long been associated with Easter as a symbol of new life and Jesus’ resurrection. According to one blog I came across, chocolate came next:

The symbol of the egg, which was already being used in Easter festivities at this time, had been a pagan symbol representing fertility and re-birth in pagan times. It had been adopted as part of the Christian Easter festival and it came to represent the ‘resurrection’ or re-birth of Christ after the crucifixion and some believe it is a symbol of the the stone blocking the Sepulcher being ‘rolled’ away. It was during this time the first chocolate Easter egg appeared in Germany and France and soon spread to the rest of Europe and beyond. (Source: http://www.failedsuccess.com)

Chocolate treats grew in popularity and became the primary Easter candy throughout the world and in America all through the 20th century. Approximately 90 million chocolate Easter bunnies are made each year!

As for the Cadbury Creme Egg, the company began making chocolate confections in the U.K. in the 1800′s, but didn’t create the Creme Egg until 1971. Four years later, Cadbury Creme Eggs gained popularity in the U.S. due for the most part to great advertising (see video above).

Because of their egg-like shape, jelly beans became associated with the Easter Bunny, who by this time had rapidly gained fame after the Civil War as the harbinger of Easter and was believed to deliver eggs as a symbol of new life during the spring season. (Source: http://www.failedsuccess.com)

Next, came the mighty Peep! In the early 1950′s, Marshmallow Peeps began their rise to Easter domination.

peeps-635When the Just Born company first discovered the yellow chick marshmallows being made by a company called Rodda, they took 27 hours to make just one Peep! In 1954, Just Born acquired Rodda and mechanized the process so that they were able to make the chicks on a mass scale. They didn’t branch out to other shapes like rabbits and eggs until the 1960′s.

Each Easter season, Americans buy more than 700 million Marshmallow Peeps, shaped like chicks, as well as Marshmallow Bunnies and Marshmallow Eggs, making them the most popular non-chocolate Easter candy. Each day, five million marshmallow chicks and bunnies are produced in preparation for Easter with yellow Peeps being the most popular, followed by pink, lavender, blue, and white.(Source: http://www.failedsuccess.com)

So while you won’t find any of these candies in the Bible, you can see that they do have a history that dates back for many centuries in the U.S. and beyond.

My Oscar Party Menu Based on the 2013 Best Picture Nominees!

Back by popular demand, is my ‘Easy Oscar Party Menu’ based on the year’s Best Picture Nominees! 

Oscars+2013+Nominations+2If you’ve seen all of the films that made the Academy’s Best Picture list, then you know how different they all are! Sure, a couple of them share a few similar qualities or locales, but for the most part, especially when it comes to food, this collection of films is like comparing apples to oranges.

Keyartmontage_620x465With that said, I think I’ve managed to make selections that reflect each film (with the exception of the pie representing Life of Pi —that has nothing to do with the film, it’s just a silly play on words!) and still create a cohesive spread of tasty treats for your Oscar party guests to enjoy.

Most of my selections are self-explanatory, but for some of the more specific suggestions, I’ve included the recipes below.

This appetizer is inspired by the main character’s name: Hushpuppy.

1 Cup yellow cornmeal
1 1/2 Tablespoon all purpose flour
1 1/2 Tablespoon tablespoons sugar
3/4 Teaspoon coarse kosher salt
1/2 Teaspoon baking powder
1/4 Teaspoon baking soda
1/4 Teaspoon cayenne pepper
1/2 Cup buttermilk, well shaken
2 Tablespoon beaten egg
1 1/2 Tablespoon chopped seeded jalapeño chile
5 Ounces extra sharp cheddar cheese, shredded
Canola oil or vegetable oil for frying
1 lime

Creamy Ranch Avocado Dip
1/2 Cup mayonaise
1/2 Cup sour cream
1/2 Tablespoon lemon juice
1/2 Tablespoon olive oil
3 Tablespoon buttermilk
1/2 Small red onion
1/2 Teaspoon kosher salt
1 Avocado (peeled, seeded and diced)

Whisk first 7 ingredients in a bowl just to to blend. Whisk buttermilk, egg, and jalapeno in small bowl to blend. Stir buttermilk mixture and cheddar cheese into dry ingredients.

Add about 1 1/2 inches of oil to a pan or dutch oven. Attach deep-fry thermometer to pan; heat oil to 320°F over medium heat. Working in batches of 4 or 5, drop batter by tablespoonfuls into oil.

Cook until golden, turning occasionally, about 3 minutes. Using slotted spoon, transfer hush puppies to paper towels and squeeze just a bit of fresh lime juice over the top while they are still warm.

For the Avocado Ranch dip, place all ingredients into the bowl of a food processor. Process until mixture is smooth and well blended. Serve alongside Hush Puppies.

This philly-centric pre-game appetizer is inspired by a line of dialogue that the mother repeats throughout the film: “I’m making crabby snacks and home-mades!”.

6 English muffins, split
1 (5 or 6 oz.) jar cheese spread, room temperature
2 tablespoons butter, softened
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
a few shakes hot sauce, to taste
1 teaspoon onion powder
1 teaspoon granulated garlic
1/2 teaspoon black pepper
1 (or 2) tablespoon(s) freshly chopped parsley
1 (6 or 7 oz.) can crabmeat, drained, flaked
Garnish with diced green onions and tomatoes, if desired

Heat oven to 350°. Arrange split muffins, cut side up, on a baking pan lined with foil. Toast for a few minutes in the oven while it’s preheating until the muffins start to turn golden around the edges.

In a medium bowl, mash the cheese spread with butter, mayonnaise, Worcestershire sauce, hot sauce, onion powder, granulated garlic, pepper, and parsley. Stir in the crabmeat (and baby shrimp, if using). Spread evenly over the split, toasted muffins.

Return to the oven for 10 minutes, or until hot and bubbly. Cut into quarters and serve warm, garnished with green onions and/or diced tomatoes, if desired. Makes 48 crabby bites. Pair with dip made with melted cheddar, mixed with mustard and dash of paprika.

1 cup sugar
1 1/2 cups corn syrup (I use 1/2 dark and 1/2 light)
4 eggs
1/4 cup butter
1 1/2 teaspoons vanilla
1 1/2 cups pecans, coarsely broken
1 unbaked deep dish pie shellIn saucepan boil sugar and corn syrup together for 2 to 3 minutes; set aside to cool slightly.In large bowl beat eggs lightly and very slowly pour the syrup mixture into the eggs, stirring constantly.  At this point I like to strain the mixture to make sure it’s smooth and lump free. Stir in butter, vanilla, and pecans and pour into crust. Bake in a 350°F oven for about 45 to 60 minutes or until set.

4 eggs, separated
8 ounces 53% cacao dark baking chocolate, coarsely chopped
3 tablespoons butter, cubed
1/3 cup plus 1/4 cup sugar, divided
1-1/2 teaspoons vanilla extract
1 container (2-1/2 ounces) prune baby food
1 teaspoon dark baking cocoa or baking cocoa
1/2 teaspoon confectioners’ sugar

Preheat the oven to 350ºC and place muffin cases in a 12 cup muffin tin. Place egg whites in a small bowl; let stand at room temperature for 30 minutes. Meanwhile, in a small saucepan, melt chocolate and butter over low heat, stirring constantly. Remove from the heat; cool slightly.

In a large bowl, beat egg yolks on high speed for 3 minutes or until light and fluffy. Gradually add 1/3 cup sugar and vanilla, beating until thick and lemon-colored. Beat in baby food and chocolate mixture. Beat egg whites on medium speed until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on
high until stiff glossy peaks form; fold into batter.

Pour into prepared muffin tin. Bake at 350° for 30 minutes or until a toothpick inserted near the center comes out with moist crumbs. Cool on a wire rack for 20 minutes.
When cool, ice with a chocolate ganache or sprinkle with confectioners’ sugar – enjoy!

As far as party activities go, an Oscars party has built-in entertainment!

Just be sure to download and print out some Official Oscar Ballots for your friends to make their predictions before the show begins. Then, prepare a special prize for whoever selected the most Oscar winners at the end of the night. If you’re on a budget, just make a nice doggy-bag filled with a selection of left-over goodies for the winner to take home and enjoy. Good Luck and enjoy the show!

Do you pack a lunch for your child? Valentine’s Day happens to fall on school day this year (Thursday, Feb. 14), so it’s the perfect opportunity to put a smile on your little sweetheart’s face and keep them feeling special all-day!

My favorite idea is pulled from KatherineMaries.com. You’ll need to buy a few of those heart-shaped boxes of chocolates in a couple different sizes. (BONUS: You’ll need to eat all of the chocolates inside ASAP! Or, I guess you could save them or set them out in a candy dish if you have self-control!)

0207a_vdaycountdowncalendarOnce you have your empty box, begin filling each slot with a fun, colorful snack! Some great ideas include: grapes, cheese, peppers, carrots, cucumbers, Jello, fruit snacks, strawberries, crackers, mini-turkey roll-ups, deli meats, cereal, popcorn, blueberries, broccoli, tangerine, raisins, raspberries, pretzels, etc. The smaller chocolate boxes are great for heart-shaped PB&J’s or any other sandwich or pita or even a cold pasta or a mini-salad. Once packed, stack the boxes and tie them together with ribbon! Your kids’ lunch will be the envy of every student in the lunchroom!

Healthy Snacks:

Make any sandwich more special by cutting the crusts off using a heart-shaped cookie cutter. Go one step further and add cupid’s arrow using a red or pink heart-tipped arrow shaped toothpick.

You could also top the sandwich with a treat, by adding a red, heart-shaped gummy candy to the top of a toothpick!

Slice an apple into circular discs, then, using your smallest heart-shaped cookie-cutter, stamp out individual hearts.

Crackers and cheese can be spiced up with the help of a heart shaped cookie cutter as well! Add salami or pepperoni to really make the heart pop!

Sweet n’ Salty Snacks:

XOXO8Pack a bag of hugs and kisses using pretzels and chocolate. Create the X’s using two pretzel sticks held together with a dot of melted white-chocolate, and the O’s by covering circle shaped pretzels in dark chocolate. Add pink and red sprinkles for fun! Click HERE for the full tutorial from GEMS Girls’ Club. Tip: Make these the night before so the chocolate has time to cool and set before being thrown into a ziplock.

Make a batch of rice crispy treats, but add in a few drops of red food coloring the the marshmallow mixture. Feel free to add other pink, red and white hard-candies or sprinkles into the mix too! Then, before they are cool, form the traditional square into a 3-D heart! Place individually in cellophane with a red bow!

As promised, I’m sharing some of the cute ideas for Valentine’s Day meals that I’ve seen scattered across the web. To kick things off, I figured I’d focus on the very first meal of the day: Breakfast!

If you’d like to take a more decadent approach to breakfast, try making red velvet scones with cream cheese frosting (click the photo below for the recipe) or strawberry Nutella stacked french toast (click photo below for the recipe)!

Whatever you decide to make for breakfast, be sure to include a festive beverage with your meal. Again, you can keep it simple by adding a splash of O.J. and a strawberry to a glass of champagne or pour your sweetheart their usual coffee with a little extra love!

  • Sparkling water (4-6 ounces) with splash of Urban Moonshine bitters
  • Enzymedica Digest Gold – take with your first bite of food, discretely, for added digestive power on contact.

  • Raw goat and sheep’s milk cheese plate & organic cashew butter with organic apple & pear slices. Pair this with a signature drink (see two options below) or a glass of biodynamic red wine.

Cocktail: Organic vodka+ splash of Knudsen’s organic cranberry+ sprig of rosemary.

Mocktail: Harmless Harvest coconut water with+ ¼ cup organic pomegranate seeds+ sprig of rosemary.

  • Oven-Free but beyond Tasty, Turkey!
    You don’t need an oven, and will never regret your investment in 360 cookware (it’s what celeb chefs like Akasha Richmond swear by).  The Qualitarian in me must point out that you should choose organic for all your ingredients especially the butter and broth or stock.
  • Stuff’d ‘Shrooms
    Did you know that mushrooms are a super supporter of our immune system? Indeed! So while alcohol, sugar, and some extras that you don’t normally have during the holidays chip away at your immune system’s soldiers, give them some mushrooms and your warriors will be back doing battle in no time. This stuffing recipe uses quinoa so it also works for the vegans, the gluten-free’s, the lactose intolerant and more among your guests. Ahhhh, crowd pleasing!

Pre-Dessert Drinks

  • Pair assortment of Fair Trade organic coffees & teas or revisit the digestifs above.

  • Choco-Hemp truffles!

Recipe:
8 oz dark chocolate (Organic Fair Trade, 70% cacao or better), chopped

¼ cup Spectrum or Garden of Life organic coconut oil

1 tsp Frontier vanilla extract

pinch sea salt

¼ cup raw cacao powder (Essential Living Foods) in a shallow bowl or on large plate

1 cup Manitoba Harvest Hemp Hearts in a shallow bowl or on large plate

Instructions:
In a double boiler, heat chocolate, oil, with 3 Tbsp of purified water stirring with a bamboo spoon, until just melted (no chunks but not runny or water rising to top of chocolate).  Remove from heat. Blend in vanilla and salt. Transfer to a stainless steel 8-inch baking dish and refrigerate until mixture sets (about 2 hours). Line a 360 cookware baking sheet with parchment paper. Using a stainless steel melon baller, scoop one serving of mixture and roll it quickly through cacao and hemp hearts. Place on parchment paper and refrigerate for 10 minutes. Plate and serve.

It always seems like such a great idea to gather all your friends together for a big holiday party this time of year… but once you’ve actually sent out the invitations and you have to start planning and getting ready for your guests to arrive, the stress kicks in and many hosts start to second guess their joyous holiday gesture! So, here are my Top 10 ideas that will make throwing your holiday party a lot more enjoyable.

1) Send an evite or digital invitation through www.paperlesspost.com or cocdot.com.  With all the running around that we do during the holidays, forget about dropping invitations in the mail and handwriting them (save that for your thank you notes!). Instead, with a few strokes of your keyboard, you will have a holiday inspired invitation ready for the masses to help you celebrate.

2) Create a theme for your party. You could throw a ‘Desserts Only Party’ that starts later in the evening so your bash is the last stop on the party schedule and all you have is a decadent display of holiday desserts for your guests to enjoy after they’ve eaten their way to your house! Or maybe you decide to host a ‘Wine and Cheese Party’, where you provide the wine and your guests are asked to bring their favorite cheese and crackers (or vise versa!). Maybe it’s even as simple as the always funny ‘Ugly Christmas Sweater Party’, where everyone wears the worst holiday sweater they can find and then votes on who’s outfit is the ugliest! Whatever you do, decide on a theme early, this will help to bring all the rest of the elements into play with time to spare.

3) Shop around your house first, then the holiday section at stores! The best place to shop is your house for various items you can easily re-purpose and use as holiday decor with a few minor tweaks. After you have taken inventory of what you currently have, make a list, check it twice, and hit a local discount store to finish off your party shopping list!

4) Get organized right from the get-go, gather everything you need to set-up your party in one place. Storing all of your party supplies in the spare bedroom, a closet or even on the dining room table, will help you ensure that you have everything ready for the day of the party so you don’t have to scramble at the last minute to find what you need.

5) Use the food as decor and also a party favor! Be creative with the food you are serving and how you serve it because it can easily be used as decor and will allow for faster clean up at the end of the night, since everyone will have devoured all of the delicious treats you were serving. One year, I threw a holiday party for my friends and baked banana bread in holiday bread pans, wrapped them with cellophane and tied them with a bright colored bow! Then, I had them placed around the house, on the mantle, the coffee table, the buffet, and at the end of the night, each guest took one home and I killed two birds with one stone, decor and gifts all in one!

6) Create ambiance with lighting and music! Again, shop around your house, pull out all the cables, some twinkle lights, dim the lights and utilize your iPod to create the perfect playlist. You can also use Pandora or Spotify on your computer or the music stations that stream through your cable television.  A little background music always helps to make for a festive holiday celebration.

7) Make your menu manageable! As the host, when you start to create the perfect holiday menu, remember that you should also be able to enjoy the evening as well. Don’t create a menu that will keep you cooped up in the kitchen, cooking and constantly replenishing food for the buffet. Finger foods and one-bite appetizers are always best to serve. Try to create a menu that requires minimal maintenance and if you need help, hire someone to lend a hand so that you can feel like a guest as well.

8) What do you want to drink?  When I throw a party at my house, I let my guests be their own bartender. For a small gathering of your friends, set up a table that acts as the bar, stock it with plenty of wine, soft drinks, alcohol, mixers or whatever you want to serve.  If you really want to make it easy, choose to serve only wine and beer, or kick it up a notch by creating a festive holiday mixed drink with the recipe posted and ingredients labeled for use. Also, be sure to have soft drinks and water for those who are driving or just would rather not have alcohol. Hot cider and hot chocolate are also great to serve and will go a long way if you keep it in an insulated serving container.

9) Make clean up a snap! After all of your guests have gone home, the host is left with a memory and a mess! So, serve food items on recyclable festive plates, use paper napkins and throw the glasses in the dishwasher so that your clean up time is minimal. I think it is perfectly acceptable to use paper or plastic plates for this type of occasion, however, it is always nice to provide real glassware for the drinks.  I went out and bought a couple dozen wine glasses and all purpose glasses that I keep stored in the box they came in, then, when I want to entertain, I pull them out and I am ready to party. Try IKEA or Target for budget-friendly glassware.

10) Be MERRY!  It is the holidays and you have worked hard all year long, so make sure that you get to have fun and enjoy yourself at your own party. It can be difficult to do, but if you plan head and are organized and not afraid to ask for help, there is no reason that you, as the host, should not be able to have a merry old time!

Whether the candidate you vote for wins or loses, the main focus of an election day party should be uniting the states of America via your closest friends and family! Take this opportunity to go back to our roots as proud Americans and illuminate the things that are unique to our culture.

FOOD: The centerpiece to any great celebration is often the food, so try to make your election day menu special with a little bit of thought and planning! I think that comfort foods are always great for any party—but for an election day party there are a few dishes that scream “American”. Here are a few to include:

  • Cracker Jacks
  • Mac & Cheese
  • Cheeseburger Sliders
  • Apple Pie & Ice Cream
  • Red, White & Blue cupcakes (Add some “VOTE 4” buttons on top for fun!)

Here are some easy tips for continuing your election day theme with your party’s beverages:

  • Colored ice cubes: Simply add some red/blue food coloring to your ice cube trays and you have an instant “American” drink!

  • Dip red, white and blue popsicles into wine glasses filled with a splash of Prosecco and BAM! Instant wow-factor drinks! For a non-alcoholic version, use Perrier or Sprite.
  • Red, White & Blue Sangria via Recipe Girl:
    2 bottles dry white wine (try Sauvignon Blanc)
    1 cup triple sec
    1/2 cup berry-flavored vodka
    1/2 cup freshly squeezed lemon juice
    1/2 cup simple syrup (see tips below)
    1 cup blueberries
    1 1/2 cups hulled and sliced strawberries
    1 cup raspberries
    1 1/2 cups pineapple chunks
  • Directions: Combine all ingredients in a large punch bowl or pitcher and stir well. Cover and refrigerate at least 4 hours. Serve well-chilled with a good scoop of fruit floating in each drink, or serve over ice.
  • Tips: To make 1/2 cup simple syrup, boil 1/2 cup water and add 1/2 cup granulated white sugar. Turn heat to simmer and stir until dissolved. Turn off the heat and let cool. Now it’s simple syrup!
*Use fresh fruit for this recipe. Frozen just won’t be great.
*To make star-shaped pineapple pieces, cut long & wide pieces of pineapple off the side of the fresh fruit. use a star cutter to cut shapes.

DECOR:
You don’t have to do much to dress up your home or a venue for an election day party, just add a dash of red, white and blue to each room!

Try making a few tin can luminaries – they’re a little bit of work but a great DIY decoration! Here’s what you’ll need:

  • Empty vegetable or soup cans, cleaned out and labels removed
  • Water
  • Sand
  • Nail
  • Hammer
  • Scrap paper
  • Ruler
  • Tape
  • Spray paint in red, white, and blue
